In hospitality, the opening date drives everything. Staff are hired, bookings are taken and launch events are planned around it. The fit-out has to work back from that date.
Plan backwards
Start with opening day and work back through each stage: snagging and staff training, installation, manufacture, approvals and design. The time you have left for design is often shorter than people expect.
Decide these first
- Kitchen and bar layout. They fix drainage, extraction and power, which affect everything else.
- Seating plan. Covers drive revenue, and banquettes and booths need making well ahead.
- Long-lead items. Specialist lighting, stone, imported furniture and equipment.
Where programmes slip
- Late changes to the menu or bar concept that move equipment
- Licensing, fire and environmental health approvals
- Equipment deliveries that arrive after the joinery is in
Build in a buffer
Allow X days between handover and opening for cleaning, training and a soft launch. It is far easier to open on time with a buffer than to open into a building site.
Built to last
Hospitality joinery takes a beating. Bar fronts, tables and banquettes need hard-wearing finishes and details that can be repaired quickly between services.
